Ideal storing: Use as soon as possible after opening. If possible store in the refrigerator and wait five minutes after taking it out of the refrigerator until the tea has reached room temperature.

We helped at this year's harvest at Mr. Fukui's farm, here are some impressions:







Mr. Fukui grows his teas in a traditional way and processes his Tencha in the oldest Tencha factory in Japan (from 1925, shown on the pictures).
Tenchas grown by the traditional Honzu shade are now a real rarity. Even in Uji, the birthplace of Matcha, nowadays there are only a handful of tea farmers who use this traditional method.
This Matcha is very powerful but at the same time well-balanced with a great balance of umami, sweetness and a slight astringency that rounds off the tea perfectly.
